Throwback Thursday: Ice Cream Pie

 It's time for another Throwback Thursday linky party with the fabulous Cara Carroll.



 Before my throwback post, I got to spend some time with my nephew this weekend. He is just the cutest and already likes books. It makes my teacher heart happy!

Today I thought I would share another one of my favorite dessert recipes with you and this one is perfect for summer.  It can be made with a ton of different combinations but my favorite is the mint chocolate chip version. It is a hit at parties and is usually gone very quickly.



Mint Chocolate Chip Ice Cream Pie

Ingredients:
 1 pack of Oreo cookies
 3 Tb. butter or margarine, melted
 1 quart of vanilla ice cream
 1 quart of mint chocolate chip ice cream
  2 cups of whipped topping
  hot fudge ice cream topping


Preheat oven to 375 degrees. Combine about 20 of the Oreos (2 cups) with the butter. I usually find 20 isn't enough so I do about 25. Spread in the bottom of a round, oven-safe pan. This pan needs to be at least 2 quarts deep because this pie is thick. Spread the Oreo/butter mixture into the bottom of the pan. Bake for 10 minutes and cool completely. Freeze this until ready to fill.


 Scoop vanilla ice cream into crust and press to form an even layer. 


 Chop up some of the Oreos (about 10 or so) and sprinkle on top of the vanilla ice cream. 


 Scoop the mint chocolate chip ice cream onto the top of the Oreo layer. Press down to form an even layer.


Spread about 2 cups of the thawed whipped topping onto the top of the ice cream. 


 Heat up the hot fudge and pour a little on the top of the pie for decoration. 
Freeze the pie for at least 30 minutes or until ready to serve.

Ready, Set, Groups: Cooperative Grouping Guide

Does cooperative grouping make you want to pull your hair out? If your district is like mine, it is a big part of your evaluation scores. Last year, I really focused on making sure my groups ran smoothly and without too much input from me. It was amazing how independently my kiddos worked by the end of the year by taking the time to set up my procedures at the beginning of the year. 

So I am introducing you to my newest creation: 


I've included lots of ideas that helped me get my groups set up and running smoothly.

Bookworms Linky Party and "Creepy Carrots"

This is a cute book about a rabbit named Jasper who is always eating carrots out of a garden near his home. Soon he starts seeing creepy carrots everywhere.  This is a very cute book with amazing illustrations!

These Are a Few of My Favorite Things: Morning Must-Haves

I've made  a little change to my blog that you may not have noticed, I am now a .com. You should still be able to follow my blog the same way as before and the old blogger address automatically will send you to my new address.

You can also follow my blog in a new way. If you use Google Reader, this is going away on July 1st. I would love it if you follow my blog through Bloglovin. I just recently started using it and it's pretty awesome!

This week's topic is our morning must haves. Being a teacher has turned me into a morning person. I'm not gonna lie that it was rough getting up the first couple of years. But now I am at school bright and early. I like to be there about an hour before school starts so I can get things done. (mostly for peace and quiet --don't tell my secret!!!!)

I like to have the news on while I am getting ready. It makes me feel more prepared for the day.

I love anything by Aveeno. I always start and end my day by washing my fave with their Clear Complexion foaming cleanser.
One of my new favorite finds is this palette by Urban Decay. It has a bronzer, highligher, and blush all together. You can mix them or apply them separately. It's hard to find a bronzer that doesn't make my fair skin look weird but this one really works. 

I am a breakfast gal. I don't know how some of you don't eat breakfast before school each day. I can't even think without breakfast. Anyways, I get so tired of cereal after a while but I usually eat a mix of Honey Nut Cheerios and plain Cheerios with skim milk.

I try to read my daily devotional while I eat breakfast. I don't always remember if I'm in a hurry or have other things on my mind but I try. It sets my day off on a better path when I do.


 I love iced coffee. There is a Starbucks near my home and it often gets me in trouble. I sometimes buy the International Delight iced coffee and it's pretty good too but not nearly as strong as Starbucks. I also love Starbucks' chai tea. Yum!
My new car has XM radio. I love listening to it in the morning because there is no talk or commercials. My favorite station so far is Pop2K (channel 10).

Bookworms: "Three Hens and a Peacock"


This week, I am going to be focusing on another cute book that I got at the Scholastic sale. This book is from Lester Laminack. He has been to speak at my school several times and has lots of great books.

 

In this book, the three chickens are tired of the peacock getting all the attention while they do all the work so they decide to switch places.

 If you are looking for a book to read, I would recommend "Wedding Night: A Novel" by Sophie Kinsella. If you like her Shopaholic books, then you will like this one. She has the same quirky writing style and is very funny. This is definitely a great beach read.
